This is a really great tuna salad recipe I got from a friend who used it in her catering service business many years ago. The secret ingredients are the curry and Parmesan cheese! Odd combinations but this makes a terrific tuna sandwich! She used it for an appetizer with gourmet crackers and people always wanted her recipe. I have never tasted another tuna salad quite like this one and it has been my favorite recipe for tuna salad for many, many years. Continue...

This is my mom's corn pie. We grew up eating this and loving it in the heart of Amish country. It is a very hearty dish, and easy to make. Give this one a try before you decide you won't like it. Corn takes on a whole different flavor made this way. Some people add cooked chicken to the pie as well. Continue...

Grilled Poblano Pepper and Mango Quesadillas Ingredients16 (10 inch) flour tortillas1 (8 ounce) package cream cheese, softened1 mango, peeled and diced1 fresh poblano pepper, seeded and minced1/4 cup butter, melted DirectionsPreheat grill for medium heat. Spread half of the tortillas with about 2 tablespoons cream cheese each. Sprinkle mango and poblano peppers over cheese, and press another tortilla on top. Brush butter over the outside of each quesadilla, top and bottom. Grill quesadillas 5 minutes each side, or until golden brown. Remove from grill, and slice into wedges. Serve warm. Full recipe...
